Years ago, I read my first food memoir, Garlic and Sapphires, by Ruth Reichel. I vaguely remember it as funny and even insightful. I clearly remember discovering that spaghetti carbonara, a dish I’d always assumed was too fancy for a home cook, only had four ingredients. It’s a culinary miracle.
My husband was living a strictly gluten-free life at the time, but he taught a class one night a week, so the kids and I instituted Gluten Tuesday. Spaghetti carbonara was our standard bearer.
It’s been years since those days, but I still love this recipe. In a busy month with exhausted kids and a husband on the road, four-ingredient fancy gluten miracles are exactly what we need.
